Fajitas with Homemade Tortillas







Fajitas
  • 12 oz steak, chicken or turkey
  • 1 Tbsp **fajita seasoning
  • 4-6 tortillas
  • 2 Tbsp cooking oil
  • 1 cup diced green sweet pepper
  • 1/2 cup diced onion
  • 3/4 cup chopped tomato
  • 1 Tbsp lime juice
  1. Cut meat into bite-sized pieces and place in a bowl. Sprinkle with 2 tsp of fajita seasoning and chill 30 minutes.
  2. In 12-inch skillet, heat 1 Tbsp oil over medium-high heat. Add peppers, onions, and remaining Tbsp of fajita seasoning. Cook and stir about 3 minutes until crisp-tender. Put in bowl.
  3. Add remaining Tbsp oil and the meat to the skillet. Cook and stir until desired doneness for steak or until chicken or turkey are no longer pink. Drain well. Return to skillet and add pepper/onion mixture and tomatoes. Cook and stir until heated through, about 1 minute. Remove from heat and stir in lime juice.
  4. Warm tortillas and fill with meat mixture and top with sour cream, guacamole, and salsa.

**Homemade Fajita seasoning: 1 1/2 tsp cumin; 1/2 tsp dried oregano; 1/4 tsp salt; 1/4 tsp red pepper; 1/4 tsp black pepper; 1/8 tsp garlic powder; 1/8 tsp onion powder
