Christmas Candy

These are the best truffles I have ever had. Enjoy.

Mare's Truffles

1 1/2 lbs (about 4 1/2 cups) milk chocolate, melted
1 cup whipping cream
1 1/2 tsp vanilla OR 5 drops peppermint oil
  1. Line an 8"x8" pan with plastic wrap.
  2. Melt chocolate in a medium bowl.
  3. In a 1-quart saucepan, scald the cream (bring it to almost boiling - little bubbles will appear around the edges). Remove from heat and let cool for 5 minutes.
  4. Add flavoring to cream.
  5. Beat chocolate with an electric mixer. Stop mixer and pour cream all at once over chocolate. Continue beating until mixture is smooth, cleaning the sides while you mix - this takes no longer that 1-2 minutes.
  6. Pour into pan and refrigerate for about 6 hours. Cut in to pieces.
