Mare's Truffles
1 1/2 lbs (about 4 1/2 cups) milk chocolate, melted
1 cup whipping cream
1 1/2 tsp vanilla OR 5 drops peppermint oil
- Line an 8"x8" pan with plastic wrap.
- Melt chocolate in a medium bowl.
- In a 1-quart saucepan, scald the cream (bring it to almost boiling - little bubbles will appear around the edges). Remove from heat and let cool for 5 minutes.
- Add flavoring to cream.
- Beat chocolate with an electric mixer. Stop mixer and pour cream all at once over chocolate. Continue beating until mixture is smooth, cleaning the sides while you mix - this takes no longer that 1-2 minutes.
- Pour into pan and refrigerate for about 6 hours. Cut in to pieces.
