GF/DF...It's What's for Dinner

Taco Salad


1 pound hamburger browned and drained

Stir in:

2/3 cup water

1 Tbsp chili powder

½ tsp salt

¼ tsp garlic

¼ tsp cayenne pepper

1 can kidney beans, drained and rinsed

Simmer 15 minutes, cool 10 minutes.



In bowl, mix:


1 medium head lettuce, cut up

1 cup shredded cheese (we don't use this, obviously)

1 can olives, sliced

2 medium tomatoes, chopped

Toss with ¾ cup Thousand Island dressing (We use equal parts of mayo and ketchup for the dressing.)


Serve over tortilla chips.

Top with sliced avocado (optional).

Tostada Pizza

Dough:
  • 1 1/2 cup warm water
  • 2 Tbsp yeast
  • 2 tsp sugar
  • 1 tsp salt
  • 2 Tbsp oil
  • 4 cups flour

Put water, yeast, sugar, salt, and oil in a large mixing bowl and let sit for 2-5 minutes until yeast is soft. Add 4 cups flour and begin mixing with a spoon and then move on to kneading when dough gets too hard to mix with spoon. Continue kneading for 5-10 minutes or until smooth.

Pizza:

  • 1 lb ground beef
  • 2 Tbsp taco seasoning mix
  • 1 tsp chili powder
  • 1 recipe of pizza dough (above) or 2 10-ounce pkgs of pizza dough
  • 2 15-ounce cans pinto beans, rinsed and drained
  • 2 cups shredded cheese
  • 2 cups shredded lettuce
  • 2 medium tomatoes chopped
  1. In large skillet cook ground beef until brown. Drain off fat. Stir in 3/4 cup water, taco seasoning, and chili powder. Bring to boiling; reduce heat. Simmer uncovered, 15-20 minutes or until most of the liquid is gone.
  2. Meanwhile, grease a baking sheet. Pat the pizza dough into a 12"x16" rectangle on the baking sheet. Prick with a fork all over the surface of the dough. Bake in a 400 degree oven for 5 minutes.
  3. In a bowl mash beans with a fork; spread over partially baked dough to within 1/2 inch of the edges. Spoon meat mixture over beans. Bake, uncovered, 10 minutes more or until crust is just golden. Sprinkle with cheese. Bake 1 to 2 minutes more or until cheese melts. Top with lettuce, tomato, sour cream, and any other toppings.
  4. Serves 12.

Beef - It's What's For Dinner


This got a "pretty good" from picky eater #1 (daddy), which is better than the "not bad" I got for yesterday's dinner. It's pretty much just a glorified shepherd's pie. It's nice to use up the leftover mashed potatoes that always seem to go bad before we finish them.

Lazy Cottage Pie Recipe #61807 (modified)

SERVES 4 -6

· 1 lb extra lean ground beef
· 1 small onion, finely chopped
· 1 clove garlic
· 1 lb mixed leftover or frozen veggies
· 1 recipe tomato soup
· 3-4 cups leftover mashed potatoes (or prepare 6 servings instant)
· 1/8-1/4 cup cheddar cheese, shredded (optional)
· paprika, garnish (optional)

1. Preheat oven to 350 degrees. Grease a medium casserole dish.
2. Prepare the tomato soup from scratch.
3. Brown beef, onion, and garlic together in a large skillet - drain fat.
4. Spread meat in the bottom of the greased casserole dish.
5. Spread the frozen veggies on top.
6. Spread the soup on top of the beans using a spatula.
7. Next spread the mashed potatoes over all, sealing edges.
8. Sprinkle with cheese and paprika.
9. Bake, uncovered for about 20 minutes, or until bubbling.
